One-tray Macro Bowl

INGREDIENTS

5-8 pieces pumpkin, chopped
1/2 cup spinach
1/2 zucchini, large pieces chopped
1 small potato
4-6 pieces of sweet potato, chopped
100g of chicken breast, fish or tofu
4-6 cherry tomatoes, halved
Cucumber, green capsicum and/or peas
1/4 avocado

METHOD

01 / Preheat oven to 180 degrees Celsius

02 / Put pumpkin, potatoes, zucchini and chicken or tofu on the tray and bake for 25-30 minutes until all are golden. Oil is optional but going without increases health benefits!
For chicken

03 / Place spinach, tomatoes, avocado and greens in a bowl (and tuna/salmon if you’re choosing to have cold fish)

04 / Add cooked veggies and serve! Try my ‘Lemon Dukkah’ recipe and sprinkle on top in place of salt!
