Homemade ‘Veggie Patch Spud Bar’

INGREDIENTS

200g potato of choice, skin on
1 tomato, diced
1 cup spinach and lettuce mix, chopped
1/4 cup corn
1/4 cup peas
1/4 cup chickpeas
1 small carrot, grated
2TBS Hummus (I choose ‘SSS foods’ hummus as it has no added oil!)

NOTE: Chicken, tuna or salmon can replace the chickpeas if desired

METHOD

01 / Preheat oven to 180 degrees Celsius

02 / Place 250g of sweet potato, white potato or a mix of both in the microwave for 7-9mins or until soft. Then transfer to the oven or grill to bake on top (around 5-10 mins)

03 / Chop up vegetables and heat any frozen vegetables in the microwave for 1-2mins

04 / Serve by placing all in a bowl and topping with hummus, avocado or a small amount of cheese

This is not even really a recipe, but an idea! Spud Bar offers amazing meals when on the go and now you can recreate it for a quick lunch or dinner!
